Fruity. Tropical. Distinctly spicy.
In the forest gardens of Kandyan Forest, near Kandy, the Scotch Bonnet Chili grows amidst diverse tropical vegetation.
Known as Naimiris in Sri Lanka, it combines fruity notes of apricot and ripe tropical fruits with a clear, lingering spiciness.
After harvesting, the chilies are first sun-dried and then gently dried. This preserves their natural fruitiness and characteristic aroma.
As flakes, they can be used sparingly – in curries, on roasted vegetables, or as a final accent over a finished dish.
